Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine flour, baking soda, salt, cinnamon, and white chocolate pudding mix; set aside.
- Using a stand mixer or hand mixer, cream together butter with granulated sugar and brown sugar until smooth.
- Add eggs one at a time while mixing well after each addition.
- Gradually incorporate the dry flour mixture into the wet ingredients until fully combined.
- Fold in white chocolate chips gently.
- In a small bowl, mix together cinnamon and sugar for rolling.
- Scoop out portions of cookie dough and roll them into balls; then coat each ball in the cinnamon-sugar mixture before placing them two inches apart on your prepared baking sheet.
- Bake for approximately 10 minutes or until they turn slightly golden around the edges.
- Allow cookies to cool on the pan briefly before transferring them onto a wire rack.
