For this recipe, I opted for boneless skinless chicken thighs; they turned out incredibly juicy and tender after cooking.

Instructions:
- Heat olive oil in a skillet over medium-high heat.
- In a shallow bowl, mix together chili powder, cumin, paprika, and pepper.
- Rub the spice mixture onto both sides of each chicken thigh.
- Sear the seasoned chicken in hot oil until browned on both sides before transferring it into your slow cooker.
- Pour in chicken broth and lime juice; cook on low for 5-6 hours or high for 3-4 hours.
- About 15-20 minutes before serving time: carefully remove cooked chicken from slow cooker; stir heavy cream, chopped cilantro, cornstarch mixed with water back into remaining liquid until well combined.
- Return chicken back into slow cooker; continue cooking until sauce thickens slightly.
- Serve over rice or quinoa garnished with additional fresh cilantro.
