Cooking a whole chicken has never been simpler than with this Instant Pot roasted chicken recipe! In just 30 minutes, you can enjoy a succulent and juicy bird that makes for an ideal weeknight dinner.

I’m a big fan of roasting whole chickens—they’re budget-friendly, incredibly flavorful, and the leftovers can be transformed into numerous tasty dishes. However, I often find myself short on time to roast one traditionally for over 90 minutes. That’s when I decided to try cooking it in my Instant Pot, and now I’m completely sold! Within half an hour, dinner was served, and it was a hit with everyone at the table!

To start your Instant Pot chicken adventure, blend together some spices to season your bird. My go-to mix includes salt, pepper, smoked paprika, garlic powder, and onion powder. For a twist on flavor profiles, consider trying a Mexican-inspired seasoning with chili powder, cumin, garlic powder, and coriander—the options are endless! Begin by browning the chicken in the Instant Pot before pressure cooking it for 25 minutes. While the chicken cooks away under pressure (and fills your kitchen with mouthwatering aromas), I usually prepare simple side dishes like pasta or rice along with some green vegetables.

You’ll be pleasantly surprised by how juicy and tender your Instant Pot chicken turns out! It rivals store-bought rotisserie chickens but is far more economical when made at home.

One of the best aspects of preparing a whole chicken is that there will likely be plenty of leftover meat! This shredded goodness is perfect for tacos or can elevate soups or salads.

If you prefer extra crispy skin on your finished dish—no problem! Just pop your fully cooked bird under the broiler for about 5-6 minutes as a final touch. No matter how you choose to serve this Instant Pot creation—it’s sure to become a staple in your weekly meal rotation!
